Pet Nat is made using the ancestral method, which involves bottling the wine before it has completed fermentation, allowing natural carbonation to develop in the bottle.
Unlike traditional sparkling wines, such as Champagne or Cava, where yeast and sugar are added to induce secondary fermentation in the bottle, in Pet Nat the carbonation is completely natural and comes from the yeasts that are still active when the wine is bottled.
