The production process begins with the direct pressing of the grapes, without destemming. Next, the juice undergoes cold settling to clean it before fermentation in tanks with native yeasts. Once fermentation reaches optimal levels and sugar levels are appropriate, the wine is bottled with crown caps, allowing for the formation of foam and the completion of fermentation inside the bottle. This method preserves the distinctive characteristics of each grape variety.
Located at Finca El Cepillo, 1100 meters above sea level, this vineyard was planted in 1995. Renowned for its variety, it hosts Sauvignon Blanc, Malbec, and Cabernet Sauvignon grapes. Utilizing the trellis system for vine cultivation.
Experience the purity of 100% Sauvignon Blanc in this unoaked expression. In the glass, it reveals a slight veil, a testament to the fermentation lees, adorned with greenish hues.
