Grapes gently pressed, temperature tightly controlled. Cold fermentation for 21 days interrupts to preserve natural sugars. Then, steel tanks induce second fermentation (Charmat Method), crafting natural bubbles. Aged on lees for 2-3 months, adding complexity. Result? Sparkling wine of exquisite quality.
Located at Finca El Cepillo, 1100 meters above sea level, this vineyard was planted in 1995. Renowned for its variety, it hosts Sauvignon Blanc, Malbec, and Cabernet Sauvignon grapes. Utilizing the trellis system for vine cultivation.
Appearance: Bright yellow, with small bubbles forming a crown at the top of the glass.
Nose: Intensely aromatic, reminiscent of white flowers such as jasmine or orange blossom combined with fruity notes such as pear, white peach and apricot.
Palate: Refreshing but delicate acidity.
Cheese and cold meat platters, sushi, chicken with mild sauces, vegetarian dishes. Fruit desserts and ice cream.
Suggested serving temperature: 6-8°C.
