Harvested in mid-March – manually – 80qq/ha – traditional production method in concrete vessels. Pre-fermentative maceration at 10°C for 48 hours. Fermentation at 25°C, with moderate extraction work, resulting in a fresh, fruity wine with medium structure. 100% completion of malolactic fermentation. 70% of the wine matures for 6 months in used oak barrels. The resulting wine is of medium structure, highly fruity, and complex due to its barrel aging. 100% malolactic fermentation in all our wines.
Finca Las Peñas (990 meters above sea level), planted in the year 1999. Varietals include Malbec, Cabernet Sauvignon, Cabernet Franc, and Chardonnay
Crafted with 70% aged in second-use French and American oak, this wine reveals a deep ruby color. Aromas of cherries, pepper, and hints of vanilla and coffee delight the senses. On the palate, enjoy a balanced mouthfeel with flavors of red peppers, spices, and a finish of cocoa, chocolate, and coffee.
Perfectly paired with red meats or dishes boasting spicy sauces.
Suggested serving temperature: 14-16°C.
