The production is always in small vessels (micro vinification), in open-top French oak tanks. In these, manual management of the cap is conducted to enhance aroma, color, and especially structural extraction. Pre-fermentative maceration at 10°C for 48 hours, followed by fermentation at 25°C. The entire volume is matured in first and second-use oak barrels for 16-24 months, where malolactic fermentation occurs. The result is a complex wine, with great structure, suitable for aging over several years.
Located at Finca El Cepillo, 1100 meters above sea level, this vineyard was planted in 1995. Renowned for its variety, it hosts Sauvignon Blanc, Malbec, and Cabernet Sauvignon grapes. Utilizing the trellis system for vine cultivation.
Aged 90% in first-use French and American oak for 16 months, with 10% unoaked. Ruby-colored with violet hues. Aromas of currants, blackcurrants, ripe cherries, figs, and blackberries.
Ideal with dishes such as Indian curry, tacos, and burritos. Merquén is also an excellent addition to lentil dishes or grilled chicken. Pasta dishes also pair well with Merlot.
Suggested serving temperature: 14-16°C.
