The production process always involves small vessels (micro vinification), using open-top French oak tanks. Manual cap management is employed to enhance aroma, color, and particularly structural extraction. Pre-fermentation maceration at 10°C for 48 hours, followed by fermentation at 25°C. The entire volume matures in first and second-use oak barrels for 16-24 months, undergoing malolactic fermentation. Resulting in a complex wine, with significant structure, suitable for aging over several years.
Located at an altitude of 990 meters above sea level, Finca Las Peñas was planted in 1999. This vineyard boasts a variety of grapes including Malbec, Cabernet Sauvignon, Cabernet Franc, and Chardonnay. Utilizing the espalier training system with 5500 plants per hectare, it yields 80QQ/ha. The soil composition is loamy clay, contributing to the unique terroir of the vineyard.
14.5% alcohol. 90% aged in first-use French and American oak for 16 months, 10% unoaked. Deep red with violet reflections. Intense nose of violets, red fruits, tobacco, cocoa, and subtle vanilla. Concentrated yet gentle palate, with great structure.
